Summer Chopped Salad with Avocado and Strawberries

If you are looking for a yummy twist on a salad, this chopped salad gets a fresh and sweet update with avocado and sliced strawberry toppings… with some short-cut tips to make it fast and easy for a light summer meal.

How I did this Recipe

I have recently become obsessed with chopped salads. You can basically mix in any ingredients that you like and each fork full is an explosion of tastes… much tastier and fulfilling than the everyday garden variety.

And if you shy away from chopped salads because it just takes too long to chop everything up – well this one is super easy and fast to make.

First I grab a big bowl – because this salad is a meal. You need a bowl big enough to layer up the ingredients and mix them. If you don’t have a big bowl, use a mixing bowl to toss everything and then serve in a smaller bowl.

For the salad base I use Dole Chopped Asian Blend that comes with a nice variety of crunchy green and red cabbage, kale, broccoli slaw, carrots and snow peas… it is packed with good vegetables! The salad mix is a HUGE time saver when making salads… also the bags seem to be a good value because everything is chopped and it is filled to the top (unlike other salad bag with mostly air because lettuce pieces are larger). Depending on the size of my salad (and other ingredients) I use about 1/3 to 1/2 of the bag.

Next, I chop up other ingredients like cucumber, tomatoes and sometimes a mushroom. There are a lot of ingredients so you don’t need a lot – I use about 1/4 of a cucumber and a small plum tomato.

To make the salad more hearty, I add Purdue Short Cut Chicken and chop it up so that it mixes well with the other ingredients. Each ingredient is added as a layer and then I add a dash of salt over the cucumber, tomato and chicken to help bring out those flavors.

Then comes the avocado – typically I use about half of an avocado (cutting it in half around the seed) and I save the other half for a salad the next day. The easiest way to slice an avocado is to take a spoon and scoop it out around the edge of the skin, turn it upside down on a cutting board and slice it. If your avocado is very soft you can just squeeze it out and cut it up with a knife as it comes out (more messy this way though).

The inspiration for the strawberry came when I purchased the first good large container of strawberries this season – I had so many and wanted to be sure to use them. So I decided to swap out cran-raisins  (which I had been using during the winter for salads) with some fresh strawberries. I sliced them up thin and for larger slices cut them in half so they would mix well with the rest of the chopped salad.

The best part about adding avocado and strawberries to your salad is that you do not need much dressing. I like to toss the chopped salad a little before I drizzle on the dressing so that it doesn’t all land on the chicken, avocado and strawberry toppings. My favorite salad dressing right now is Maple Grove Farms of Vermont Lite Honey Mustard Dressing… but you could use any dressing you like!
